Garden harvest is winding down, but there are still things left in the garden to pick and preserve.
A few of the harder looking leftovers in my garden like onions, peppers and celery are also pretty spectacular in winter soups and stews.
To preserve them for that future purpose, I am choosing a dehydrator.
I first wash, dry and remove any decayed, soft or scarred bits.
I then follow the advice of the manufacturer that advises size to breakdown the vegetable or fruit, drying time and drying temperature.
I store the resulting dried vegetables and fruits in individual mason jars, ready to be reconstituted in a warm winter meal.
If you are new to dehydrating, apples are a good first choice to experiment.
