Saskatoon berries, also known as Amelanchier alnifolia are native to Western Canada. They grow as small and large shrubs and trees that are valued for their edible, sweet-tasting fruit. The berries are rich in nutrients and antioxidants, with a long history of use by indigenous people.
Recently a friend gifted me some Saskatoon berries and I decided to make a fruit crisp. I used the Saskatoons, fresh rhubarb and frozen blueberries for the fruit component of the crisp.
Instructions:
- Place Saskatoon berries, rhubarb (cut up into small pieces) and blueberries in a 9 X 13 pan.
- Drizzle the rhubarb and berries with lemon juice and sprinkle on white sugar. Also dot them with a bit of butter if you wish.
- Combine the brown sugar, flour, rolled oats, salt and cinnamon. Cut in the butter and mix until it is a crumbly consistency. Sprinkle over fruit.
- Bake in a 375 F oven for 45 minutes or until golden brown.
- Serve warm with ice cream or whipped cream.

2 cups Saskatoon berries (fresh or frozen)
2 cups rhubarb (cut small)
4 cups frozen blueberries
lemon juice (about 1 Tablespoon)
1 Teaspoon salt
1 Teaspoon cinnamon
2 tablespoons white sugar
1 cup brown sugar
1 cup flour
1 cup rolled oats
2/3 cup butter
